携帯からのみに制限してますが、オープンな状況で運営してるのですが、プロクシという性質上スパム行為をされる可能性があると思いますが、その際のログはWEBサーバーの生ログを見るしか方法はないのでしょうか？

簡単なログ出力とかあると便利かと思いますがないですよね？

ないですねー。なにをロギングしたいかのニーズもまちまちだと思うので、そのへんは自前で仕込んでいただければと。
「履歴を保存」しているあたり（737行目付近）で、セッションファイルに吐き出している内容を、ログファイルにも書き出すのがお手軽かもしれません。
